Some have been from those of you with a background in the craft. Others are ready to try your hand at it and see \u201cthe pack\u201d as an opportunity to become a pickler.<o:p><\/o:p><\/span><\/span> <\/p>\n<div style=\"margin: 0in 0in 10pt;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">For those of you new to pickling here are a few pointers, and then some recipes.<\/span><\/span><\/div>\n<div style=\"margin: 0in 0in 10pt;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">We sort pickles into three sizes:<\/span><\/span><\/div>\n<div style=\"margin: 0in 0in 10pt;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\"><b style=\"mso-bidi-font-weight: normal;\">Small:<\/b> cucumbers\/pickles this size are often called cornichons or gherkins. They are generally less than 2 inches long, and \u00bd inch fat. As you can imagine, picking your cucumbers so small requires a lot of plants and a lot of picking, so they are a bit of a delicacy.<o:p><\/o:p><\/span><\/span><\/div>\n<p><span style=\"font-family: Calibri;\"><b style=\"mso-bidi-font-weight: normal;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\">Medium:<\/span><\/b><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"> We sort the next size up so that they are small enough to easily fit whole into a wide-mouth canning jar. They make for a beautiful pickle. Depending on your hand, they are generally \u201cfinger-sized.\u201d<o:p><\/o:p><\/span><\/span><\/p>\n<div style=\"margin: 0in 0in 10pt;\"><span style=\"font-family: Calibri;\"><b style=\"mso-bidi-font-weight: normal;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\">Large\/Slicer\/Chunker: <\/span><\/b><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\">Cucumbers that start getting too fat or large to fit many into a jar are still good for pickling and have many uses. Bread and butter pickles, lime pickles and dill pickle spears are all examples of pickles you can make from large ones.<\/span><\/span><\/div>\n<div style=\"margin: 0in 0in 10pt;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">There are a few general things about pickling that are good to know before you get started:<\/span><\/span><br \/>&nbsp; <\/p>\n<div style=\"margin: 0in 0in 0pt 0.5in; mso-list: l0 level1 lfo1; text-indent: -0.25in;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-family: Calibri; mso-bidi-font-size: 11.0pt; mso-bidi-theme-font: minor-latin;\"><span style=\"mso-list: Ignore;\"><span style=\"font-family: Calibri;\">1.<\/span><span style=\"font-size-adjust: none; font-stretch: normal; font: 7pt\/normal &quot;Times New Roman&quot;;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">Only use <b style=\"mso-bidi-font-weight: normal;\"><i style=\"mso-bidi-font-style: normal;\">pickling cucumber varieties<\/i><\/b> when pickling. They are a firmer cucumber than slicers and have the ability to stay crunchy.<o:p><\/o:p><\/span><\/span><\/div>\n<p><\/p>\n<div style=\"margin: 0in 0in 0pt 0.5in; mso-list: l0 level1 lfo1; text-indent: -0.25in;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-family: Calibri; mso-bidi-font-size: 11.0pt; mso-bidi-theme-font: minor-latin;\"><span style=\"mso-list: Ignore;\"><span style=\"font-family: Calibri;\">2.<\/span><span style=\"font-size-adjust: none; font-stretch: normal; font: 7pt\/normal &quot;Times New Roman&quot;;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">Scrape or cut the <b style=\"mso-bidi-font-weight: normal;\"><i style=\"mso-bidi-font-style: normal;\">blossom end<\/i><\/b> (the \u201cbottom\u201d of the cucumber) off your cucumber as there are enzymes in the remains of the flower blossom that can soften your pickle in storage.<o:p><\/o:p><\/span><\/span><\/div>\n<p><\/p>\n<div style=\"margin: 0in 0in 0pt 0.5in; mso-list: l0 level1 lfo1; text-indent: -0.25in;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-family: Calibri; mso-bidi-font-size: 11.0pt; mso-bidi-theme-font: minor-latin;\"><span style=\"mso-list: Ignore;\"><span style=\"font-family: Calibri;\">3.<\/span><span style=\"font-size-adjust: none; font-stretch: normal; font: 7pt\/normal &quot;Times New Roman&quot;;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">To help keep pickles crunchy people have for years added <b style=\"mso-bidi-font-weight: normal;\"><i style=\"mso-bidi-font-style: normal;\">grape leaves<\/i><\/b> to their jars of pickles. The tannins in the leaves are supposed to help keep them crisp. You can also use oak leaves, currant leaves, sour cherry leaves or horseradish shavings. (This isn\u2019t necessary for lime pickles.)<o:p><\/o:p><\/span><\/span><\/div>\n<p><\/p>\n<div style=\"margin: 0in 0in 0pt 0.5in; mso-list: l0 level1 lfo1; text-indent: -0.25in;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-family: Calibri; mso-bidi-font-size: 11.0pt; mso-bidi-theme-font: minor-latin;\"><span style=\"mso-list: Ignore;\"><span style=\"font-family: Calibri;\">4.<\/span><span style=\"font-size-adjust: none; font-stretch: normal; font: 7pt\/normal &quot;Times New Roman&quot;;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span style=\"font-family: Calibri;\"><b style=\"mso-bidi-font-weight: normal;\"><i style=\"mso-bidi-font-style: normal;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\">Do NOT use table salt<\/span><\/i><\/b><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"> for any pickling recipes, it contains non-caking agents which can discolor your product. Use pickling salt or sea salt.<o:p><\/o:p><\/span><\/span><\/div>\n<p><\/p>\n<div style=\"margin: 0in 0in 0pt 0.5in; mso-list: l0 level1 lfo1; text-indent: -0.25in;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-family: Calibri; mso-bidi-font-size: 11.0pt; mso-bidi-theme-font: minor-latin;\"><span style=\"mso-list: Ignore;\"><span style=\"font-family: Calibri;\">5.<\/span><span style=\"font-size-adjust: none; font-stretch: normal; font: 7pt\/normal &quot;Times New Roman&quot;;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">Canning is not a necessary step for making pickles. For many pickle recipes you can simply put the jars in your fridge, give them a week to pickle, and have a great batch of \u201c<b style=\"mso-bidi-font-weight: normal;\"><i style=\"mso-bidi-font-style: normal;\">refrigerator pickle<\/i><\/b>\u201d They are a good way to begin learning pickling and test out the flavors and tastes you like best.<o:p><\/o:p><\/span><\/span><\/div>\n<p><\/p>\n<div style=\"margin: 0in 0in 10pt 0.5in; mso-list: l0 level1 lfo1; text-indent: -0.25in;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-family: Calibri; mso-bidi-font-size: 11.0pt; mso-bidi-theme-font: minor-latin;\"><span style=\"mso-list: Ignore;\"><span style=\"font-family: Calibri;\">6.<\/span><span style=\"font-size-adjust: none; font-stretch: normal; font: 7pt\/normal &quot;Times New Roman&quot;;\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; <\/span><\/span><\/span><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">To learn how to process you pickles so that you can bring them out for your Thanksgiving or Xmas nosh, come to the pickling class that Emily Akins and I are teaching at the <a href=\"http:\/\/www.badseedkc.com\/farm\/classes-events\/\" target=\"_blank\" rel=\"noopener noreferrer\">Bad Seed<\/a> in July. Note that the date may change based on this year\u2019s pickling cucumber harvest dates.<o:p><\/o:p><\/span><\/span><\/div>\n<p><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">A general source for canned pickle recipes (tested for safety) is the MU Extension. You should read this link (<a href=\"http:\/\/extension.missouri.edu\/p\/GH1457\" target=\"_blank\" rel=\"noopener noreferrer\">Pickling Basics<\/a>)<\/span><span style=\"font-family: Calibri;\">and the associated <a href=\"http:\/\/extension.missouri.edu\/p\/GH1452\" target=\"_blank\" rel=\"noopener noreferrer\">Quality for Keeps: Steps to Success in Home Canning<\/a> <\/span><span style=\"font-family: Calibri;\">. The first document has recipes for sweet gherkin pickles, dill pickles, bread and butter pickles and pickle relish.<\/span><\/span><\/div>\n<p><\/p>\n<div style=\"margin: 0in 0in 10pt;\"><span style=\"font-size: 12pt; line-height: 115%; mso-bidi-font-size: 11.0pt;\"><span style=\"font-family: Calibri;\">You can also buy pickling lime at the grocery store and make lime pickles. The recipe on the Mrs. Wages bag is for sweet&nbsp;pickle chips that are&nbsp;crunchy every time. You can use any of the pickle pack&#8217;s aromatics. Simply clean the ingredients and add to the jar. Pre-boiling the cucumbers is something that I do not do anymore and the pickles are fine.
